Ah, sorry, missed that detail. Have you tried a hard reboot of the MMI by pushing on the volume knob for ~20 seconds until the system reboots? That is what I'd try if it were my cell phone with the issue.
Here's a thought, which cellular network is the car connecting with? ATT, Verizon, T-Mobile? I have no idea anymore. Is the provider different from your phones? Not sure that would matter, however, I briefly switched to T-mobile and suddenly nobody could reach me at home. I'd suddenly get a notification I had a voice mail. Phone never rang. I noticed the connection would bounce around between LTE, 5G, and 5G Ultra Wide too. After a couple weeks of that I went back to Verizon. Anyway, point is, could some similar be happening with your car's cellular provider?
After that, maybe it's a hardware problem?
...or maybe I should stop since I'm not an engineer or cellular connection expert.
