Can't change APN info - 2018 S6

I ordered a Freedompop sim and put into my 2018 S6. My car is getting an AT&T signal but I'm not able to change the APN info. The option doesn't appear when I go to Data Connection options.

Anyone else experience this?

P.S. Ignore the T-Mobile in the screenshot. That's the network for my cell phone connected via bluetooth.
