Get a pressure bleeder. Makes life so much easier. I had never used one before, always used the 2 person method which seems somewhat cumbersome, especially when the person operating the pedal doesn't really know what they're doing.

Basically you fill the bottle with fresh brake fluid, attach it to your reservoir and pump it up. Then you open the bleed screw and it pushed out air/fluid without you having to do anything else. I think the savings in time and headache makes up for the price, though it isn't expensive by any means. This is the one I got, $30 bux:

Pressure bleeder is easier by yourself yes. To answer your question though you can definitely gravity bleed. I just have a small hose that presses over the bleed nipple with a check valve on the other end (not needed if you keep the other end in fluid), pump the pedal, top up the reservoir when needed etc. Have done it many a time by myself, I just check the color of fluid in the tube every now and then to see if new fluid has started to pass, really only need to get out to check when on the passenger side.
