Question about gutting high flow cats?

Hello the exhaust on my b6 was installed by the previous owner. It has xs power 2.5" downpipes and fast intentions 2.5" catback. Is it possible for the cats to get clogged? Also I want the tone of my exhaust to be a bit deeper, it sounds good but I want more. Can I gut these, also is it a good/bad idea to do so?

I gutted the metal cats on my 2.5" Fast Intentions DPs.
Very raspy and loud, even with the stock exhaust.

So do you think it's a bad idea?

I didn't want to gut the cats, but I bought the DPs used, and the cats were beginning to break down in the center, so I didn't want to install them in that condition.
I regret not sending the off to Fast Intentions to have new cats installed. Besides the sound, the car stinks of gas.
