Coolant temp shot through the roof today and had to get it towed

So I've been watching the coolant temps all week with the Torque app to get a good baseline before I install the PLM Heat Exchanger.
We have had a heat wave in Toronto and most days the coolant has been 98-101 C.
Today as I was driving I started seeing it climb much higher.
When it hit 123 I was very worried.
And also something else strange happened.... my Air Conditioning was not blowing very cold anymore.
It was warm/cool not super cold like usual.

A minute later the cluster beeped at me to check the coolant level and turn off the car.
    The coolant was full.

Called for a flat bed (CAA finally came in handy) and had it towed to my regular shop.
His guesses were thermostat or water pump.
I have another friend saying it's the coolant temp switch...

My mechanic will dig into it Friday but was wondering if anyone here had some thoughts.

    Thanks very much.

I just got diagnosed for a leaking coolant switch. Noticed coolant level really low. Glad I caught it before getting stuck.

Yes it was done under warranty back in the summer of 2011.
