Unfortunately Matt@oCarbon was the only operation I know of that focuses on trim sets for Audis. MaCarbon is another highly regarded CF company, and may be willing to do your B5 trim if you send it in, but I'd bet they're a good bit pricier as they typically focus on higher end stuff.
Another option would be to message Matt and ask how quickly he can have it done, and that you'll pay in full upon completion as you're not interested in waiting months for it to be completed.
Your best bet is if you can find a used oCarbon set, but unfortunately they don't come up for sale very often.

Who's to say he doesn't spend on both? I think it's very important to have a nice interior, and the carbon really steps things up from the stock trim.

I'm not sure I'd call him a scammer, but he's definitely not a reliable source anymore. Lots of terrible stories over the past year or two about his customer service (no communication) and ridiculous delivery timeframes.
