So I was debating on getting a new sets of rims, but I am unsure if they will work or what modifications I will have to do to have them fit. They will be 20x10 with an offset of 25, would that be cutting it close? I'd run 255/30 for the tires? and this will be on the 05 3.2 model

with 20x10, you won't make it with a 25 offset...that will rub everywhere and extend beyond the wheel arches.

So I should go 20x9 with a 32 mm offset?

Try using a wheel/tire calculator like this one to see how it will effect the car. My guess is w/ 9in wide wheels it will need a slightly less aggressive offset and it will depend on the width/height of the tires as well.

What look are you going for? A 32 offset on a 9" wheel is going to have some minor poke. Upping the offset to 38 will pull the wheel in flush with the fender. If you are lowered, either setup will have a tendency to rub (et 32 more so than et 38). This can be combatted with negative camber in the rears or going with a slight stretch on the tires (255 is good but no less than 245).
As stated above the 20X10 with an et of 25 will not work, you will be crushing fenders unless you roll and pull them tremendously.
