There is no way that the 911 will be any kind of substitute for what the RS7 provides. It is an apples to oranges comparison. The practicality combined with the prodigious thrust of the RS7 will simply not be matched by the 911. That said, Porsche vehicles deliver an overall driving experience that is very hard to beat. Kids will grow, and the puny excuse for a back seat in the 911 won't cut it whatsoever. Car seats are a struggle at best and then they will be extremely uncomfortable. If you have another practical vehicle you can use when the need arises, then, by all means, go for it. The drive of the Porsche will leave you wanting nothing. But as an only vehicle, I wouldn't do it.
If you are looking for something more engaging than the RS7, but with the daily practicality you need, I would take a serious look at the M4. I was in the same boat a number of years back. I wanted a precision, engaging car, but I needed to be able to transport my kids. I bought an e92 M3 coupe for 4 years and couldn't have been happier. The M4 will also provide that feeling of torque that you are used to in the RS7 with much better handling and driver feedback.

The GT3 is very track focused. It will be brutal on the street unless you live in a place where the roads are consistently pristine. The OP wants a daily driver. I have always been a fan of the GTS range. It is like a "Street+" package.
