A place between here and there

You def need to do a throttle body adaption with VSDS or a similar program. You can not just throw on a different throttle body. It is an electric component and was adapted to the last vehicle it was on. Doing it with battery cable removal and leaving key in the starting position afterwards won't cut it. That only basically adapts it to it's old adaption, like a reset button. This requires a full throttle body adaption only capable programs can do.

Hopefully someone close to you will let you use theirs. Try the regional section and ask, or mahbe someone here will chime in. But I don't recall too many b5 montreal owners on here. More b6 guus, so you can try posting a thread in their chatterbox section too, in hopes one will respond. After that, we can try and help you further. But your engine does not sound the greatest...like a bad cct.
