I would start with checking all the suspension joints for looseness. Given how it happened and the sounds I would be looking for a failing ball joint on one of the control arms or as mentioned a sway bar end link. If you lost a end link the car should feel loose. Another possibility is you ran over something and the tire kicked it up.
As far as CV's go most people go with a complete replacement because typically it's not cost effective to pay a shop to change one joint. If you're doing your own work, and it's the outers that failed, I would consider replacing just the outer CV's. The factory axles are a known good part and the inners out last the outer by a large margin. If you have time, you can pull your joints apart and inspect them for damage and then order boot kits or joints as needed. Most people can't tie a car up that long, so it's easy to take the safe way out and just get a new joint. Low cost complete axles are often a crapshoot, complete good quality our a fresh outer is my recommendation. I have had good luck with outers from Meyle (70,0000 miles no issues).
On my B5, I needed outers at 70,000! The inners were fine. At 130,000 the inners were still good. My B6's inners are perfect at 150,000 miles. I think I paid about $100 for a good outer CV from one of the online vendors.
