Best brand is Mocal, but comes at a price. You want a thermostatic one. Non thermostatic and it will take a very long time for your oil to reach operating temp.
When removing the stock cooler, you run the chance of overheating if the thermostat gets stuck closed. But the benefit is your oil gets hotter quicker. Oil bypasses the cooler into your engine. When it reaches a certain temp, it opens and goes through the exchanger then your block. But if thermostat gets stuck, it never circulates oil through the exchanger and you will overheat the oil due to no cooling.
Safest is stock cooler with aftermarket sandwich plate. Warms up like stock. Then extra cooling capacity when sandwich plate thernostat opens. And remember, your oci will now require more oil because more volume to fill.
As for oil pressure, use your stock port location. There is a vdo adapter. Cant recall thread pitches off the top of my head (on my cell phone and about to go to work, but I'll post links when I get home). I picked mine up from summit racing. It is a 3 way tee. Goes onto stock oil switch port. Then on the other ends, you place the stock switch, thread adapter on other port for metric to npt, and place your gauge oil pressure switch. This is how I have mine set up.
