FWIW, Copper is a much better conductor than Iridium and Platinum. It is generally used in high performance/modified engines running higher boost. For example my turbocharged B5, I use NGK-BKR7E's (copper plugs) which is one heat range colder than stock and gapped specifically based on best results from my tune manufacturer (GIAC). One caveat for copper plugs is that they erode faster over time vs Iridium/Platinum. I tend to switch them out every other OCI.
So to answer your question, Iridium and Platinum plugs are typically chosen for their longevity. I'm too early in my B8.5 S4 ownership, plus I'm not tuned to switch from stock plugs. Would stick with what your tuner would recommend (since your stage 2) otherwise, default to what manual calls for. The claims by parts stores to upgrade to the Triple-Spark Ultimate Unobtainium plugs are typically just upsells.
