Lets clarify two things:
Traction Control: stops wheel spin.
Stability Control: keeps the car going in the direction of the steering wheel.
When you push the traction control button, it will turn traction control off, allowing for a lot of wheel spin...but stability control is still on. If you hold the button for 5s, it will then turn stability control off, allowing you to countersteer and slide around (well, as much as Quattro will let you slide around) For having fun in the streets and playing on the track, turn traction control off but leave stability control on unless you really know what you're doing. For playing in the snow or sliding around in the rain, you'll want to also turn stability control off for good slides.
