You can log lambda (air:fuel), and long-term and short-term adaptations. If you search for my logging thread, it will show you where they are in VCDS, and has a few things to look for in regards to running E85.
You will get a lean code when you run too much E85. I would recommend logging for anyone that runs an E85 mix, but it's an absolute must if you want to run over 25-30%. As I mentioned above, there is no way you can run more than 40-50% E85 on the stock fuel pump without going lean (maybe you can got a few % points higher, but that's the ballpark). Anything over that 50% range requires a fuel pump upgrade, and a supporting tune.
