I just installed my Ecs geomet slotted rotors and posi-quiet semi metallic pads! No noise and still a good bite upon braking! Surprised at how much dust my wheels have now though...

ended up going StopTech slotted rotors and OEM pads.
bite is horrible and my brake pedal travel distance is pretty high and spongy.
    really bummed.

Sounds like you need a brake fluid bleed.

So this issue regarding pedal travel and spongy feeling only came after the pad/rotor change? I would take it back to the shop to complain, because if you have brand new pads/rotors, you shouldn't have this problem, no matter the hardware.

they were the ones that told me I'd have some issues with a high carbon rotor and organic/organic blend pads. Essentially implying the soft pads would decrease bite and increase pedal travel/spongey feeling when the system is cold.

granted it gets a bit better in stop and go traffic, but it's still no where near OEM response.

What do you guys suggest for low dust and overall decent street performance. I don't drive overly aggressive but want low dust and close to OEM performance. Don't really have a need for high performance any better than OEM. Is Bosch Quiet cast any good? I hear ceramic pads can be noisy.

I bought Zimmerman Z-coat rotors but can't decide on pads.
