P0171 & RPMs acting strange. Quattro 6spd Auto

Pushing 188K miles. These last 20k have been killer after having a nice joyful 150k with no major issues.

I have searched these forums and others and while the info is helpful, I haven't been able to find a solution to this problem.
So now I'm sitting here with a P0171, sometimes P0304, CEL. The temp gauge is constantly fluctuating between 1/4 & 1/2 marks on cooler morning. Car feel like it has no low end, RPMs go up but no torque to get me going. The RPM's also act strange while climbing (see video). I am getting crappy gas mileage, average 15 city & 26 highway I have ready tried swapping coilpacks with no luck. I have tried my best to look/listen for a vacuum leak, but I don't hear anything unusual.

I have replaced the following within the last 20k

    Cam Follower
    Fuel Pressure sensor
    Coolant Flange

Car ran great for a few thousand miles then I started getting P0171, P0304, P2181 CELs. Went ahead and did the following

Timing Kit (belt, water pump, ect..)
    Thermostat
    PCV
    Coolant Temp sensor
    Coil Packs
Plugs (Tried both OEM Iridium & Copper)
    Cleaned MAF

I am not sure whats going on and I haven't had time to drop her off at a mechanic. I try to do as much as I can at home.

I was thinking diverter valve but I'm not sure and its a pain in the ass to remove. I cannot get any thing in the area to get those 3 bolts off. I know that I did replace my diverter valve back at 75k miles though, not sure if I got a new piston style or the old diaphragm version.

Video of RPM strangeness. This is from a stop light, accelerating to 60 or so. My foot applying constant pressure to accelerator pedal

Does your rpm bounce up and down at steady speed? Set the cruise at 60mph and watch the needle, I'm pondering the Torque Converter may be the culprit

No it does not. If I cruise, RPMs stay put. Temp needle is a different story, it goes up/down constantly. Only time I can say for sure it goes up to middle and stays there is on a really warm day like last Thursday here in socal.

Wow, that is strange. Mine holds middle at all climates. Def not normal.

I don't know very much about this stuff compared to most here, but I just finished (hopefully?) dealing with a couple minor issues. In my research here, I learned that the N205 (CAM Adjustment valve) can mess with your mileage quite a bit. And that makes me wonder that if your CAM is way off, it might screw with your valve timing and create the issues you are having with RPMs as it accelerates. it would also make sense that your tach would be consistent at a constant speed. Might be worth checking. It's a $140 part, but a simple procedure.
