My Bilstein PSS10's do it too (mostly in the front). I figured out that the noise is coming from the dead coils touching each other. When turning, I think the spring is twisting slightly or something and binding on itself. Then it releases and you get the boing/popping sound.
Here's a whole thread I started about this and I outline what I found including pictures so you can see where it's binding. I was able to "fix" it by putting something around those dead coils to keep them from touching - and this worked 100%, confirming my thoughts about the springs touching causing the issue. But the solution I ended up with isn't all great. They are starting to do it again, although more muffled and quieter. I need to go jack up my car and see if I can see why. It's like the silencer pieces are wearing down or something.

I'm almost tempted to put my stock suspension back on I'm so annoyed with this sound. Or maybe go for H&R OEs on my stock shocks. These noises are driving me nuts.
