One stupid question about VAG-COM. Is it possible to save the original coding of entire car, before making hacks, and then if you want some day, when you have all sort of hacks enabled, just load back factory settings, that you backed up with vag com?

Absolutely and HIGHLY recommended. DO a COMPLETE SCAN of the entire vehicle, and then save the log file. Put that file in several places as you can always reefer back to it later. I have an ORIGINAL printed and kept in the glove-box, I mark on that what changes were made to coding and then also compare a before / after whenever the car goes into service (run a scan before, another after, then compare the text files)

Its also a fantastic way to "CYA" if you mess something up while coding.
