As it has been mentioned...
1. Headliner - remove the headliner, remove the old fabric / scrape off all of the old foam, and either recover it yourself or take it to a auto trim / upholstery shop to have it recovered professionally. (I just finished recovering my headliner, A/B/C pillars, and sunroof cover last night in grey suede)
2. Seats - you either need to buy a new seat and swap them, buy a new seat cover and swap them, or take the seat to an auto trim / upholstery shop and have it fixed professionally.
3. Steering Wheel - you either need to buy a new sport steering wheel (you need one from a 98-01 with the later hub design which utilizes a separate clock spring while the earlier model wheels had an integrated clock spring... you do not need a new airbag) or take it to an auto trim / upholstery shop and have it recovered professionally (this really should only be recovered by professionals).
4. Arm Rest Cover - you can either recover it yourself with a new material (this requires removing the lid from the center console, separating the upper and lower plastic pieces that are fused together to form the lid, making a new upper piece out of particle board or wood, rewrapping the new upper piece you made with your material, and reattaching the wrapped upper piece to the lower piece) or attempt to buy a used one in good shape that matches.
