koni or bilstein. the koni has a softer ride while the bilstein is more harsh but better suited for track days. i'd go with koni.

the guy at your local performance shop probably hasn't driven as many b5 audis with konis around race tracks as i have. they are perfect for the job and less prone to position sensitive damping than bilsteins. camber kits are not necessary. sport springs will give you the best combo of ride, handling and looks. race springs will give you more looks at the expense of the other two.

would u say that race springs will actually handle worse than sport springs?

maybe not worse but they aren't any faster around a road course. i tracked my car with kw v1 coilovers at several different heights and found it to be just as quick when it was close to stock sport height and the ride was much better. shine racing did a ton of testing and came to the same conclusions. i run their development set of bilsteins with their proprietary springs on my avant.
