97 2.8: Bizzare Coolant Warning Behavior

I have a 97 A4 with about 145,000 miles on it. I had the coolant resevoir tank replaced in June. I am currently living in a high mountain environment with tons of cold nights. Anyway for the past week or so, I've noticed that when I pull the car out of my spot and head down the little hill (oh about 15 degree slope) towards the exit of my complex...the red coolant temp. warning light will start to bilink. All I have to do is restart the car, and it won't come on again. It has never come on the second time i start the car. Nor on any start ups at any intermediary stops along my trip out. The next time it will come on is usually when the car has been sitting for a while. Then I have to repeat the procedure. What gives.
