yeah i'm with believer I don't have a 2.8 but you have to have some sort of pick up tube if i'm not mistaken I believe you have two. if you have a chain on metal sound at low and high oil pressures its one of two things pick up screen slugged or your cam chain tensioner and/or chain is on its way out. and I am 100% certain that 2.8's have two cam chain tensioners and chains.
easiest way to tell if its the pickup tube is to hook a oil pressure gauge up and check your oil pressure.
EDIT: found a general idea of what pressure you should be running compliments of walky_talky
Generally, the 1.8T's top end will start getting noisier once the oil pressure gets below 20psi or so.
Just checked my oil pressure after my drive home to be sure:
Idle: 26 psi
2k: 55 psi
3k: 70 psi
4k: 80 psi
5k: 95 psi
