    help with overheating

About a week ago I was driving and my car started beeping so I look down and it says CHECK COOLANT LEVEL and the temp is at H, I pull over to see whats up and the coolant is low so I open the cap and it steams then goes back up to normal levels- Im like WTF?! I get in the car and its fine for about 15 mins, then does it again. I get home and turn off the car. I put more coolant in and its fine for a day, then does this little dance again. I checked the forum, thought it was the thermostat, changed the pain in the ass thermo, the car still does it. Coolant levels are fine, but now it gives me the error and car is at H within 5 mins of driving or maybe a mile from home, but only randomly. What do you guys think?

also I called my mechanic and he said he doesn't think its the water pump because it wouldn't be overheating so quickly or randomly. Second its not leaking and the coolant level is fine. Any help is much appreciated.

damn it I was hoping it was just a bad sensor, the car runs fine, even when it says its overheating.
