The dishes were very traditional. We only made it through 11 of the 14 courses, I had originally thought it would be a 5-7 course meal. We gave up at the 8th course, 9,10,11 were done and brought to us any way. We polished them off. What he had left was Nabe, maguro yake, and fresh tiger shrimp.
What we had,
1 edemame,
2 sashimi: Top clockwise. Maguro, Sake, Tai, mackerel, Abalone, Tako, tai, sake
3 Shishamo (broiled/grilled smelt ) like a bacon french fry.
4 Tempura: Koba squash, broccoli, onions, shrimp, asparagus
5 Sushi rolls: Spider, Spicy tuna, Negi hama, philly and alaska
6 Tori kaarage: (a type of fried chicken with special spice)
7 Shrimp and oyster katsu
8 Fresh oyster in a vinaigrette (i don't know what he calls it but i could have eaten a dozen.
9 Nigiri: Uni, Salmon roe, tamago and unnagi
10 Broiled/grilled king crab legs
11 Desert was fresh fruit.
On top of that he had 3 special sake types paired with the dinner. Of which he ordered straight from japan. We did not make it to the 3rd bottle. The first was paired with the sashimi, and was superbly smooth and light. Fantastic way to clean your pallet. The 2nd was paired with the Katsu/tempura and gave a bit more of a licorice bite, again It was wonderful. Retail price on the bottles would have been several hundred. our cost was much less.
