I have driven both (both stock and chipped) for extended periods, and the difference is pretty huge. The 2.7 sounds like a beefy v6, plenty of torque all around, pulls 5 people uphill in 6th gear, much more fun to drive overall IMO. Although a chipped 1.8T has some pep to it, it's nothing like the 2.7. The biggest thing I noticed is that the 1.8 is pretty weak below 2500 rpm (almost have to dump the clutch at 2000 just to get moving), whereas the S4 has no problem getting started below 2500rpm.
Big con for the 2.7 is that everything basically costs double what it does on the 1.8T. Two turbos. Two pair of turbo inlets. Two exhaust pipes (dual). Two DV's. Maintenance/Upgrades can be killer.
I saw around 23~28mpg (city/highway) with the 1.8T. In my S4, I average about 21mpg (mostly city), with the best being 32mpg on the highway (coming back from Oregon). If I really romp on it in the city, I'll see maybe 17 or 18mpg.
2.7T avants might be hard to come by, but you should still try one out even if its the sedan version. But hey, in the end, it's still an Avant so it's all good.
