The car determines a bunch of the time it takes. Removing the OEM stuff once you have experience is very easy, if you dont have experience it can take quite awhle.
Once you get to the install portion, there are quite a few extra steps I take to ensure that everything is installed properly.
Some of the steps include:
Clocking both the comressor housing and CHRA so that the oil return line and the charge pipe line up correctly.
If it is a new style ATP manifold, the wastegate actuator bracket need to be clearanced so that the turbo can be clocked.
I like to test the wastegate actuator prior to install to set it right at 15psi
I replace all of the vacuum lines and check valves so there will be no issues once the motor sees higher boost
I gasket match the ports on the head and exhaust manifold
I do a full coolant flush as well as a complete oil change, prime the turbo and spin it without the motor being started to ensure that there is no bearing damage
I file all of the banjo fittings so that they are perfectly flat, this ensures there will be no coolant leaks
I have a kick ass wrench that allows me to tighten the hard to get at bolts in under 5 minutes.
Road test the car, train the new owner how to use the VAG-COM to see how the car is running and diagose issues.

How much would it be to ship the elim. kit you sell to 61616? I'll be buying it from you guys within the next month.
Now that I know everything you do when you install, I'm a little scared that they won't do all that...
And they will know what to gap the spark plugs at right?
