Has anyone else noticed that with all windows down and the sunroof open the middle rear seatbelt flaps a lot? Are there any easy fixes for this?

not really, its a physics thing with the wind. u could try glueing the seatbelt down, of buckling it in, but other than that, just crank the tunes and keep on rolling.

Funny because it doesn't happen on my A4, I don't rember it happening on my 04 Camry either. Guess those cars defy the laws of physics.

maybe your pulley is loosening? It certainly doesn't do that in my car with all the windows down.

could have to do with the pillar designs, or window opening sizes and designs, or the sunroof deflection design as to how the air flows through the car.

The same thing happens on my brand new demo 08' A8. Tuck the belt in the center console, and it should be fine.

yea, it's had that same problem from my car (00 d2 a8) on up... I think it's just the way the car is designed. No way around it except to keep your belt tense indefinitely, but i'd think that may leave impressions on the seat cushion. who knows. i've just gotten used to either turning the music up or keeping the back windows up.
