Just the trans if you have access to a lift or a pit.

If you don't, but have access to an engine hoist, then pull the engine and tranny.

Having done both (transmission on a lift, motor on jackstands), I prefer to pull the motor & transmission together.

    2nd!

it more convenient together, but still a lot of work. im assuming you are doin this at home or in a garage, so you'll need a bunch of stuff to get you off the ground.

    -lift
    -jackstands (2 is enough)
    -cherry picker
-palette (to drop your motor/tranny onto)

    anything else i forgot?

Some beer and a water pipe for tobacco use would be nice while working with these cars.

    Re: opinions on clutch removal

I've also done it both ways (tranny in a pit, and engine/tranny on jackstands), and I can tell you that it's about the same amount of work, it just depends on what you'd rather EFF with, axles, tranny mounts, and dp's, or the rad support, AC, and PS pumps and lines. Also, if you pull just the tranny you don't have to drain any fluids. If you pull the engine as well you have to drain pretty well all of the fluids minus the brake fluid.

Like I said, you don't have a lift or a pit, just pull the engine/tranny together. If you DO have either of those things, I'd rather just pull the tranny, myself.
