this weekend. Since we're gonna have everything off, are there a few items I should replace as well? Chasis has 72k on it. And should I go oem or aftermarket for the stuff?

Check your Tie-Rod ends. Mine just went out and I have 94k/mi. You can get a set of OEM replacments on ebay for about $55.

Adjust the coilovers BEFORE you get them on the car. Its a total PITA to adjust on the car.

I would start off 2.50 inches of thread showing on the front and 2.25 inches showing on the front (for a 1 finger gap in the back and no gap in the front. )

I just did mine this week, I came across nothing that needs to be replaced.

OF course audi recomends replacing all the bolts but I did not do it.

Also do both the fronts then both of the rears at the same time or else you will be pinching beacuse of the sway bar.
