Comparing the following:
ST X Coilovers vs Koni Yellow shocks and 034/H&R lowering springs. I know the shocks and springs kit would likely provide better ride comfort, but would the coilovers beat the shocks/springs in handling?

Depends how picky you are. Some people want a very specific height. Coilovers are the only way to go for that. Adjusting the rear koni dampers is a pita. If you live somewhere with road salt it will corrode the spring collars on coilovers. Just things to think about.

What’s the procedure for adjusting the Konis? I imagine I’d probably set them once during install and never mess with them again if I went that route

Handling wise, a CO system is designed as a whole and performs better where as spring / shock combos will work however not quite as cohesively.
Additionally, since a lower center of gravity = better handling, generally speaking that means COs will get the edge as the vehicle can be lowered further than a spring / shock combo. That extra drop can really help, even 1/2 an inch. Also, our cars run heavy reverse rake from the factory... that's where you get that front end bounce / float. Most spring sets lower the car but keep this attribute. However some like Eibachs are an even drop which levels out the car and mostly eliminates that characteristic. However, still a spring kit.
Since you're in NY, go with KW V1's as they are the same as ST's with galvanized bodies (KW owns ST, same company). Super compliant and comfortable ride, great in the turns too. If you buy coilover sleeves (like a sock for the body) to protect them from the elements, you'll rarely have an issue when adjusting. PB Blaster is always your friend.
