I have a 2018 s7 with 21 inch wheels.
I am looking at a set of 20x9 with a set of 255-40-20 for winter.
Will this work and fit alright?

This site is great. The 255/40/20 is almost 3/4" larger in diameter. You can measure or cut out a template but may work.

Assuming stock size 21"
275/30/21 on 21x9 ET35
to
255/40/20 on 20x9 ET??

So the new diameter is just under the 2% larger diameter than your 21's which should be ok. Question is what is the offset of the new wheels? If it is the same as your 21's it should not be an issue, 5-10mm either way is usually not an issue either, but more than that could potentially rub the suspension or fender.

The stock wheels were 21x9.5 et35 and new were 21x9 et35. Fit great as I just finished up. No rubbing at all.
