any idea about which could be the shelf life for well stored (dry room, not exposed to sunlight) and sealed brake fluid bottles?

Years. Or until the plastic degrades enough to leak.

ok thanks, so even 4/5 years could be ok?
I ask because I still have 2 sealed bottle of Castrol SRF that is really expensive, would like to use them....

In plastics, 5 years according to Castrol.

if unopened, yep, i would say up to five years would be ok.
i would never use brake fluid that has been previously opened.
most brake fluids are highly hygroscopic, meaning, they absorb water from the atmosphere like a sponge.
water in brake fluid is bad.
the heat generated by the pad/rotor friction will heat the fluid in the caliper.
any moisture in the fluid will begin to boil and create steam.
the steam is compressible and results in a mushy feeling brake pedal and loss of braking performance.
that moisture can also cause corrosion in the caliper pistons.
