Would all season tires be good for this terrain? Every once in a while I drive out on lightly graded dirt/gravel roads in the country side to do some outdoor activities, you guys think all season tires would hold up to it? What about summer tires? I'm thinking they'll be too soft and get chunks beaten out of it.

Summer tires are usually very hard, so they can withstand the heat/wear and tear of friction. I would say All-seasons would be the best option, where summers would be too hard and winters obviously way too soft.

I'm between all season and summer tires. No need for winter tires down here :).
I thought summer tires were soft, so they'd grip the road more?

Sorry, wasn't taking into account where you live. You're right, summers are made of a softer rubber compound to grip, and tread usually has more surface area. In comparison to winter tires though, at 72 and sunny (San Diego), the Summer tires will hold up a lot longer (obviously).
I'd go with All-Seasons for your situation, the summers are really intended for pavement.
