When they replace the coolant pump at the dealer do they always replace the thermostat. I see from the previous owner the coolant pump was replaced 12,000 miles ago because of a leak, getting ready to bring it in to have the engine mounts done and was wondering if I should have them replace the thermostat as preventative maintenance. Up until seeing the water pump was replaced already. Car has 80k on it now. Thoughts?

It’s under the supercharger so a different set of work. Had mine changed at 160K.

Exactly. It's sort of a big job, so no, they don't automatically replace the thermostat when replacing the water pump.
If you are thinking of having them replace the thermostat I would have them do the PCV while under there too.

I think I'll wait unless you experienced Audi owners think its a "thing" with 80k mi on the clock. Is this a thing that goes with no warning signs? Thoughts?

If it is the same as the B8 S4 3.0T, then the thermostat fails closed with no warning, mine went at about 36k miles ($1200, mostly labor).

If you have a 2012 and are certain the thermostat has never been replaced with the updated part, it's prob one of the most sensible preventative measures you can take as it's a known failure item. I replaced mine proactively when i first got the car, but the dealership also replaced it again when my water pump went out recently out of precaution without knowing for sure if it had gone bad. I don't know how common that practice is to do both together.

I hate recommending anything like this...since you could be like Spectre above and go 160k without issue so spending $1200 now with almost half that mileage is hard, but you could also end up having it fail at any time and causing other issues or leaving you stranded. It's really up to you if the cost is worth the peace of mind.
The only warning you will get is your temperature gauge will start to rise above middle, (who really watches that gauge constantly...) then electronic chimes and alerts about overheating.

Most 3.0’s have bad thermostats early in life, if your sure ur hasn’t been replaced. I would have them do it while they are working on it you probably will save some money.

FYI, I’m the second owner and I don’t know if the thermostat had been previously replaced. I wouldn’t bet against that.
