I'm comparing the Injen intake against the AWE carbon fiber intake. There's obviously a huge difference in price. Is there any functional difference between them? Any performance or significant sound difference? I love the look of the carbon fiber, but at over $1000 it seems hard to justify. Are there any other options worth considering?
Waste of money. If you're stage 2 dual pulley get an RS7 airbox. below that no point beyond sound.

What's the benefit of the RS7 setup over other options?
Edit: And how does that fit on the 3.0t?

Well, it was designed for The 4.0T that needs more air than our 3.0T when stock. The fit is perfect it sits in the engine bay in the same footprint as the OE box. The others are noisy bordering on obnoxious. As mentioned, don't waste your money unless you do the other power increasing mods to take advantage of the extra intake air supply. However, should you require more sound get an Ingen.

I only have experience with a RocEuro intake for the 3.0T. I actually bought the intake ever before I even purchased the car, because of their black friday sale. Something I recommend you do regardless of what you decide to do. I chose to go RocEuro because I never read a thing about anyone not liking the sound it makes, which like A6sport pointed out, is really the only reason you'd get one. Plus it comes with a partition that isolates that compartment a little bit more. Also, I don't know if others do this, but if you were ever to buy an APR Ultracharger you won't be stuck with a useless intake. If you buy the Ultracharger through them they send you a new intake, for free, and you send them back your old intake. It's just a thought if you were planning something like that down the road.
