Anyone tackle this? Any DYI around?
I'm going stage 2 this week and I've heard they need to be changed/gapped different from stock.

Done plenty of spark plugs myself but in a few weeks I will be tackling this myself on our A7

What brand would you recommend?

I am going with Bosch for mine but I am completely stock. I have been told that stock plugs are Bosch or NGK Platinum.
Maybe contact the tuner company to see what they recommend for brand and gap for the setup are going after.

V6 or V8?
I did my 3.0T and the hardest part was the drivers side dealing with the coolant tank. Believe it or not it is actually easiest to drain the expansion tank, completely unhook and remove it then just refill when done.
It will make getting the drivers side much much easier.
Passenger side is pretty straightforward.
Also if you dont have an official coil puller get some wire and make an 8" loop, once you have the coil unplugged just fish the loop of wire under the coil and gently yank and twist.
I think this would be the same for both the V8 and the V6...

Literally this tied into an 8 or 10" diameter loop so you can loop one end under the coil and yank the other end.

On my 3.0 TFSI (Q5) I just removed the coolant expansion tank's two nuts and undid the hard return line, pulled the tank up to free it at the bottom and swung the entire thing forward and held it with a bungee cord. Did the same with the hard line. No need to drain and pull it all out. There was plenty or room behind it in that position to access all coil packs and plugs on the driver side.
I used two long zip ties to form loops, put one around each side of the coil pack and pulled straight up. Pull hard and smooth, constant upward pressure, and they come right out. Should be similar on the V8, I would think.

AFAIK APR recommends different gap only for their stage 3. I'm on sage 2 for about 1.5 years now using my stock spark plugs.

Does any one know the stock gap for stock plugs or do they come pre gapped?

Never assume they come pre-gapped. When i did mine (Bosch OEM from dealer) 5 were gapped right and 1 was way off.
