Just wondering if there is noticeable better performance after the 75,000 mile service.

Not unless you get a carbon clean and or new spark plugs

Plugs are scheduled at 55k, so it's really just required service of DSG and Supercharger belt (B8) with an oil change at 75k.
Buy Audicare for it if you are DSG, it's actually cheaper than paying for standalone service and includes oil change at next interval.
