Will 2016 front and rear S7 calipers fit on a 2016 A7? Is it just a simple swap or is there more that I will need to purchase?

No expert but the rear calipers look all the same to me. Check the part numbers.

rotor size is different.

The front caliper on the S7 is totally different than the front caliper on the A7. It is designed for the S7 rotor not the A7 rotor. The rear caliper on the S7 is essentially the same as the A7 but the rotor size is different between the 2 models.
So, you can not just swap the front calipers and really no benefit to swapping the rear calipers.
