Sounds like this has been noticed before. Wondering if anyone has any suggestions, or recommendations to smooth out these downshifts when using the Sport mode? I hesitate using it due to the rough nature of it. Normal Drive mode is smooth as butter.
That's kind of the nature of sport mode. The only issue that has been fixed by a TSB is the shifts from 2 > 1. But as you slow down the downshifts happen early to give you quicker access to power and therefor are a little jerky. If you want smooth, drive in D.

It is by far most noticeable in those lowest gears. Any idea what the TSB number is?

I don't have the TSB number.
I have a 2014 with all TSBs applied and I notice 4 to 3 and 3 to 2 are the harshest. At first I didn't quite understand why until I got my exhaust installed and you can hear the car auto blipping and downshifting properly to maximize power band.
However, from 2 to 1 I noticed the car will stay in 2 as long as possible if I'm pulling up to a red light and won't go from 2 to 1 until the car is almost complete stopped. That specific behavior is what the TSB fixes. If you take your car to a dealer and complain about harsh downshfits I'm sure they will find the missing TSB.

The only time I find it's an issue is if driving in stop & go and forgetting to put in D, as well as if you brake to late and it has to shift sharply down to 1st. Since I cut my mid muffler out I can hear each downshift in S now very clearly, 2nd -1st is the loudest for sure.

This is one of the reasons why I loved my BMW 545i with SMG transmission. The auto downshifts would be delayed until the car was stopped at the traffic light, and then it would shift directly into 1st so you were ready to go. If you wanted to manually downshift you could, but the car wouldn't force you to downshift if you didn't want to.

In sports mode, mine jerks as it downshifts from 6 to 5 ... and 3 to 2.
The 3 to 2 shifts are more violent.

The S6 doesn't either, if you're in D. When slowing down will stay in the highest gear possible until you reach a stop then it'll go into 1.
This is one of those cases of you can't have your cake and eat it too.
In S the expected driving characteristics is Sport-like and its behaving that way. When you slow its expecting you to want to take off again so trying to make sure when you do, you have power.
In D this is the more relaxed, driving around the city mode.

It's a feature not a fault
It's feedback you don't have enough throttle in it

Yep, if you don't want the aggressive downshifts, keep the car in "D."
