How do you remove the SERVICE display when we put the key to on ?

You can clear it with a vagcom cable and the free demo software. There is also a DIY for it and doing it a manual way but that method escapes me.

No there is a manual override but it escapes me how to do it. Something with holding it down and the key? I forget. Do a search for SERVICE INTERVAL LIGHT and I'm sure it will come up.

you hold the pin that adjusts your clock then turn the car on

The car has to be off to start. press the odometer reset while you turn the car to on (not start). Then pull the clock adjust to choose the reminder to reset, and press the odo reset to reset it.
