I am going to change the shocks and springs of my 1.8T. I wonder if I should replace the old bolts and nuts with new ones..If I am going to get them from the dealer, what should I ask for? suspension bolts and nuts? What size? Also, how many new bolts and nuts do I need? I am changing both the front and rear shocks and springs. Thanks very much.

But ive heard ppl said that I dont have to touch the pinch bolt if I am just doing the shocks and springs.

lol yes, like I said, I never mess with pinch bolts, but it takes a very particular process.

but it takes a very particular process.

What does that mean? Is there any trick to do that?

doing suspension, it is quicker to not mess with the pinch bolt, but easier if you remove the pinch bolt.

If I do not remove this pinch bolt, I still can slide the shock down in between the upper links?

Yes you can. AW has a DIY for removing the front struts w/o taking out the pinch bolt. Search for it.
