I ran 255/35/19's for a little bit without any issues

Other than the fact that the tires will be taller and throw off your speedo and possibly rub, sure.
Best size to remain close to stock height is 245/30R19. 255/35's are huge!

I ran 245's with no rubbing/no problems on stock sport suspension. Considering you b6 s4 guys ride a lot higher, i'd say he'd have no problems.
